The Grumpy Chef recommends seasoning after cooking

When it comes to cooking lentils there’s one very important thing to remember: salt is not your friend. Adding a little seasoning during the first stages of cooking is usually common sense, but do this when you’re preparing these lovely legumes and you’re certain to ruin your dish. Rather than improving the flavour and adding depth, early seasoning in this case serves only to toughen the little blighters, leaving you unable to reach the consistency or flavour that you desire. To ensure that your lentils reach the soft, slightly mushy consistency that they’re known and loved for, be sure to hold off on adding salt until the very end.
