The Grumpy Chef recommends using a sharp knife
Anyone who’s ever cooked with onion will have almost certainly at some point fallen prey to its terrible tear-inducing vapour. Whilst there are many recommended techniques and tips for reducing the likelihood of any onion-induced upset, there are very few that actually work. And if there’s anything guaranteed to put The Grumpy Chef in a bad mood it’s silly old wife’s tales that fail to deliver.
According to him (and I wouldn’t want to argue!), the most effective way of keeping the eyes dry whilst chopping onions is in fact very simple. The first thing to be sure of is that the knife you are using is very sharp as this will enable you to cut straight through the flesh without tearing the outer layer. This in turn will reduce the amount of horrid vapour that’s released into the air and, potentially, into your eyes. Secondly, and you may think this is a bit weird, but you should also keep your tongue stuck out of your mouth while you chop as this will help to catch any vapour that does happen to escape before it has a chance to travel up your nostrils and cause trouble.
So, the next time someone tries to spin you some old wife’s tale, you can save them the trouble by directing them this way.
